@ gwiz and arekin-While I tend to distrust "experts" or any kind, especially the self-described or those deemed worthy by others relying upon them for their "superior knowledge", you can't dismiss a culture's preference for simple details with regard to their culinary heritage. The Japanese imltho, are allowed passes on their anal attention to details regarding their cultural heritage after all, they took two for the team-

My own sushi would not be deemed worthy by most Japanese, but most Americans I serve it to act like they've just seen majolica performed when I prepare it and they partake.

The "right" way offers the experience as closely as it was intended by the culture, and the "wrong" way offers the Hindi version of "Star Wars" as a culinary experience., and I've had some shit sushi in my day, mostly prepared by white people. Oh, and a proper Japanese would never put that fake-ass artificial crab-pollock shit in their handrolls, either!

I like both ways, because I'm a fucking goat and would eat cardboard or tin if prepared suitably. I try to however, prepare and consume sushi according to tradition, and find it the most satisfying for the sushi experience. I am constantly trying to improve upon my rice according to the Japanese standards and practices-If you ace the rice, the rest is a cake-walk.

Oh yeah, and if you drink anything but black coffee, yer effeminate.

But seriously, when I say bourbon I just mean Southern whiskey, so I mentally include Jack and Jim and all the the other ones. But you're right, there's a difference. I like Southern whiskey because the sweeter flavor is good on my palette. It's not super sweet, just slightly sweet to the taste. And if you finish a glass of neat whiskey (any type) and set the empty glass out for twenty minutes or so, you can smell the sweet notes or smokey notes. A good Woodford Reserve smells like vanilla.

Slightly oaky doesn't bother me at all. In fact, it gives whiskey a certain charm. I don't care for Scotch, because it's way too smokey. Though if I'm in Vegas and being a douche with a cigar, I'm drinking Scotch because it just works together.

However, all bourbon is aged in charred oak barrels, and that does give it a hint of smoky flavor, which my sensitive palate can detect. That's why if I have to drink an American whiskey made mostly from corn I'll drink Tennessee whiskey, like Jack Daniels, because it's charcoal filtered. That helps remove a little more of the smoky flavor.

Fuck Kentucky and their fucking bourbon - unless I'm on a jag and there's nothing else around. I'll drink girly peppermint schnapps before bourbon, and that sweet, syrupy shit is pretty damn low on my list.

But a glass of good Canadian hooch, especially the higher end stuff like Gibson's and Wiser's, can stand toe to toe with whiskey made anywhere else on Earth, IMHO.

Ok try this at home kids-

2 shots espresso of yer choice
16oz Cafe Du Monde
1-1/4Cup respectively, mixed, half n' half & heavy whipping cream
1-1/2 Tbsp or to taste, Ghirardeliia, Oopershnootzen, or whatever hardcore chocky powder you decide to pay too much for..

1 container big enoough to hold it all
*sm Agave syrup
sm sugar of yer choice
sm topping

Make the espresso and Cafe Du Monde according to preference-(mine's respectively with a standard sotvetop macchinetta for espressa,and simply drip through filter the CDM)

Inna separate accommodating sauce pan and stirring constantly, heat the mixture of H$H/HWC,and sugar(s) to just prior to boiling, the thing will want to rise up outta the saucepan...(don't be alarmed-turn off oven, light fuse, get away)this should be sufficient to produce a thickish creamy head, no unmixed chocky

add the milk stuff to the coffee combo, serves one strung-out fiend or four no-jaggers.

Black coffees' great as well, but some days for the sake of yer eccentric self or some other perosn yer trying to please, you have to go all-out.

Starbucks??? Ain't got shit on the above what with their syrup flavours and their fancy machinery and their wi-fi and New York Times...they sell cd's in Starbucks don't they??.....Like Bob Dylan's last album?? $90 coffee cups..Hrummmmph!

It quite fascinated me when i moved to the city. The closer i get to the center, the more difficult it becomes to get a bloody coffee.
It kind of evolves from 'coffee, please' to 'a medium coffee, please' and ends in a 'a medium black coffee, no sugar, no cookie, no milk on the side, please'.
